Vegan Banana Pancakes


INGREDIENTS:

1/8 cup wheat bran
7/8 cup barley flour
1 tablespoon organic light brown sugar
1 teaspoon baking powder
1/4 teaspoon Celtic sea salt
1 teaspoon organic chia seeds
2 dashes of Saigon cinnamon
3/4 cup unsweetened nondairy milk (cashew, almond)
1 medium-sized ripe organic banana
1 teaspoon pure vanilla extract

 
DIRECTIONS:

1. Mix the wheat bran, flour, sugar, baking powder, salt, chia seeds, and cinnamon together.

2. In a different bowl, mash the banana and mix in the milk and vanilla extract.

3. Combine the wet ingredients with the dry ingredients and mix well. Add more milk if the batter is too thick.

4. Cook on medium-high heat in a skillet until browned on both sides.

5. Makes about 12 pancakes.

6. Serve with pure organic maple syrup.
